3-Ingredient Banana Coconut Samoa Cookies

These simple cookies require only three ingredients and no flour, offering a guilt-free treat that tastes like Samoas but even better. They are easy to make and perfect for a quick snack or dessert.

Ingredients
  

  • 1 teaspoon coconut oil
  • 1 cup shredded coconut
  • cup semisweet chocolate chips
  • 1 ripe banana

Method
 

  1. 1. Preheat oven to 350°F.
    2. Mash banana.
    3. Mix in coconut.
    4. Form 6 cookies on a lined sheet.
    5. Poke center holes.
    6. Bake for 10 to 12 minutes. Let them cool completely.
    7. Melt chocolate. (Optional: Add 1 teaspoon of coconut oil to the melted chocolate for easier dipping/drizzling). Dip the bottoms of the cooled cookies in melted chocolate and drizzle some on top.
    8. Freeze until the chocolate turns solid. ENJOY!
