Cheesy Crispy Beef Kebabs with Garlic Yogurt

Savory beef kebabs wrapped in lavash or tortillas, loaded with melty mozzarella cheese, baked until crispy, and served with a light garlic yogurt sauce. Perfect for lunch, dinner, meal prep, or family gatherings.

Ingredients
  

2 lb ground beef
  • 1 onion finely diced
  • 1 red bell pepper finely diced
  • 1 teaspoon fresh parsley chopped
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper
  • 1 tablespoon paprika
  • ¼ teaspoon ground cumin
  • 1 –2 bags shredded mozzarella cheese
  • 6 lavash breads or tortillas
Garlic Yogurt Sauce
  • 1 cup plain yogurt
  • 1 teaspoon garlic powder
  • pinch of salt
  • 1 teaspoon lemon juice

Method
 

Preheat the oven
  1. Preheat oven to 425°F.
Prepare the beef mixture
  1. In a large bowl, combine ground beef, onion, red bell pepper, parsley, salt, black pepper, red pepper, paprika, and cumin. Mix thoroughly until fully combined and slightly sticky.
Assemble the kebabs
  1. Lay out lavash breads or tortillas. Spread a thin, even layer of the beef mixture across each one. Top with shredded mozzarella cheese. Roll tightly into logs, then slice into 1.5–2 inch pieces. Thread onto skewers.
Bake until crispy
  1. Place skewers on a parchment-lined baking sheet. Bake for 10–15 minutes until the bottoms begin crisping. Flip skewers and bake another 5–10 minutes. Broil on HIGH for 2–3 minutes until deeply browned and crispy around the edges.
Make the garlic yogurt sauce
  1. In a small bowl, combine yogurt, garlic powder, salt, and lemon juice. Mix well and refrigerate for 10–15 minutes before serving.
Serve
  1. Spread garlic yogurt onto a serving plate. Arrange hot crispy kebabs on top. Finish with fresh parsley, extra lemon juice, and cracked black pepper if desired.

Notes

Lavash gives the crispiest texture, but tortillas work great too.
Broiling at the end makes these extra crispy and flavorful.
Don’t overwork the meat mixture or the kebabs can become dense.
These reheat well in the oven or air fryer.
