- In a medium bowl, combine the chopped nuts, 1 tablespoon honey, and 1 teaspoon cinnamon until evenly mixed.
- Fill a shallow bowl with warm water. Dip one rice paper sheet into the water for a few seconds until just pliable.
- Lay the softened rice paper on a clean work surface.
- Repeat with the remaining two rice paper sheets, slightly overlapping each one to create one long sheet.
- Spread the nut filling in a line along the bottom edge.
- Roll the rice paper tightly into a log.
- Carefully coil the log into a spiral.
- Brush the spiral with avocado oil or olive oil.
- Drizzle with the remaining honey and sprinkle with the remaining cinnamon. Top with extra chopped pistachios if desired.
- Air fry at **350°F (175°C)** for **7–10 minutes**, or until golden brown, crispy, and caramelized.
- Drizzle with a little extra honey before serving.
Notes
Don't soak the rice paper for too long—just enough to soften it.
