One Pan Creamy Tuscan “Marry Me” Orzo with Beyond Chicken

A creamy, flavor-packed one-pan dinner made with Beyond Chicken, orzo, sun-dried tomatoes, spinach, and parmesan. Easy, satisfying, and perfect for busy weeknights.

Ingredients
  

  • 3 tablespoon olive oil
  • 2 boxes Beyond Chicken or plant-based chicken pieces
  • 5 cloves garlic minced
  • 1 cup sun-dried tomatoes
  • 2 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 cup orzo uncooked
  • 3 cups chicken broth or vegetable broth
  • ¾ cup coconut milk or heavy cream
  • 1 cup grated parmesan cheese
  • 2 cups fresh spinach

Method
 

  1. Heat olive oil in a large, deep skillet over medium-high heat.
  2. Add Beyond Chicken and cook for 3–4 minutes until heated through and lightly browned.
  3. Add garlic, sun-dried tomatoes, Italian seasoning, salt, and black pepper. Cook for 2–3 minutes until fragrant.
  4. Stir in orzo and chicken broth. Mix well to combine.
  5. Reduce heat to medium, cover, and cook for about 10 minutes, stirring occasionally, until orzo is al dente.
  6. Stir in coconut milk and parmesan cheese until creamy and fully combined.
  7. Remove from heat and add spinach. Stir until wilted from the residual heat.
  8. Serve immediately and top with extra parmesan if desired.

Notes

Swap coconut milk for heavy cream for a richer version
Use vegetable broth to keep it fully plant-based
Add red pepper flakes for a little heat
