- Heat olive oil in a large, deep skillet over medium-high heat.
- Add Beyond Chicken and cook for 3–4 minutes until heated through and lightly browned.
- Add garlic, sun-dried tomatoes, Italian seasoning, salt, and black pepper. Cook for 2–3 minutes until fragrant.
- Stir in orzo and chicken broth. Mix well to combine.
- Reduce heat to medium, cover, and cook for about 10 minutes, stirring occasionally, until orzo is al dente.
- Stir in coconut milk and parmesan cheese until creamy and fully combined.
- Remove from heat and add spinach. Stir until wilted from the residual heat.
- Serve immediately and top with extra parmesan if desired.
