Method
- Peel the bananas and insert a popsicle stick into the cut end of each banana. For smaller portions, you can cut the bananas in half before inserting the sticks.
- Spread a thin layer of peanut butter around each banana.
- Place the bananas on a parchment-lined tray and freeze for 30 minutes.
- Add the dark chocolate chips and coconut oil to a tall microwave-safe glass or jar. Microwave in 20-second intervals, stirring between each, until smooth and melted.
- Stir in the chopped peanuts.
- Using the tall glass makes dipping much easier. Dip each frozen banana into the chocolate mixture, rotating to coat evenly.
- Place the coated bananas back on the parchment-lined tray.
- Freeze for 15–20 minutes, or until the chocolate shell is fully set.
- Enjoy immediately or store in a freezer-safe container.
Notes
Keeping the bananas whole creates the best presentation, but you can cut them in half for smaller portions.
A tall narrow glass helps fully coat the bananas while using less chocolate.
Sprinkle additional chopped peanuts on top before the chocolate sets if desired.
