Method
Make the Dough
- In a large bowl, combine the warm water, instant yeast, and sugar.
- Add the bread flour and mix until no dry flour remains.
- Cover and let rest for 15 minutes.
- Add the salt and knead for about 5 minutes.
- Gradually knead in the olive oil until the dough is smooth and elastic, about 4–5 minutes.
- Cover and let rest for 45–60 minutes.
- Divide the dough into 4 equal portions (about 295 g each).
- Place each dough ball into a lightly oiled airtight container.
- Proof for 2–3 hours, or until the dough is soft, puffy, and stretches easily.
Assemble the Pizza
- Preheat your pizza oven or oven according to the baking method below.
- Slice the plum cherries.
- Stretch one dough ball into a thin 12-inch round.
- Drizzle with olive oil.
- Sprinkle on the garlic.
- Add the mozzarella evenly over the dough.
- Top with the sliced plum cherries.
- Sprinkle lightly with salt.
Bake until the crust is golden brown and the cheese is melted.
Finish with fresh basil and, if desired, drizzle with balsamic glaze or honey.
