Method
Marinate the Chicken
- Combine the chicken with olive oil, lemon juice, smoked paprika, sweet paprika, Italian seasoning, garlic powder, onion powder, salt, and pepper. Cover and refrigerate for at least 30 minutes.
Sear the Chicken
- Heat a skillet over medium-high heat and add a little avocado oil or another high-smoke-point oil. Sear the chicken uncovered until golden and cooked through. Remove and let rest.
Loosen the Ramen
- Add all 3 packs of ramen to the same skillet, followed by the chicken broth. Simmer for only 1–2 minutes, just until the noodles loosen. Don't fully cook them yet.
Make It Creamy
- Quickly add the heavy cream, 1 cheese seasoning packet, garlic powder, and about a handful of mozzarella. Stir until combined and creamy.
Finish
- Cook briefly until the ramen is just tender and the sauce is creamy. If it's too thick, add a splash of broth or heavy cream. For a thicker sauce, add more mozzarella or a little extra cheese powder.
Serve
- Slice the chicken and place it over the ramen. Garnish with parsley and serve immediately.
Notes
Want more protein? Feel free to use 2 chicken breasts.
Don't clean the skillet after searing. The browned bits add extra flavor.
Use a splatter screen to help control splatter without trapping steam.
Add mozzarella or cheese powder gradually so you can control the thickness.
Taste before adding extra salt. The broth and cheese seasoning are already salty.
Keep the ramen slightly underdone. It will continue cooking in the hot sauce.
